Cheese and Crabmeat casserole

Scale

Ingredients

16 slices of sandwich bread – crust removed and cubes

6 eggs

1 pint of milk

1 tsp salt

1/2 c margarine or oleo, melted

1 or 2 cans of packaged or frozen crabmeat

1/2 pound of Old English cheese grated medium fine


Instructions

Divide into 3 piles – bread, cheese, and meat

Grease a 2 qt casserole. Make layers of bread, cheese and meat on repeat. 

Beat eggs and milk and salt, pour over the casserole. It may look like too much but it is not. Pour melted butter over, refrigerate overnight. Bake at 400 for 45-60 but put on a cookie sheet with hot water in case of spill over. Put foil over it if it looks done too soon. Serves 8-10

Ingredients

1/2 loaf of bread, crust removed and cubed

1 package imitation crabmeat cut into chunks

8 oz frozen shrimp, cooked and cut into halves

2 hard boiled eggs cut into chunks

1/2 chopped celery

1/4 c green onions

1 to 1/5 c mayo


Instructions

Mix all ingredients and leave overnight or 8 hrs in fridge. 

The ‘salad’ should be very moist. Can be served with romaine lettuce. Serves 10-12

Ingredients

Thaw and squeeze 2 packages – 6 oz of Alaskan King Crab and set aside

12 oz cream cheese

2 tbsp Worcestershire sauce

1 tbsp lemon juice

2 tbsp butter

1/2 c finely chopped onion

4 dashes garlic salt


Instructions

Whip together and spread on a decorative dish. Spread 1 bottle of cocktail sauce on top of the cream cheese mix. Place chunks of crabmeat on top of cocktail sauce. Serve with wheat thins to scoop. 


Notes

Meara’s super-fast (like “Oh shit, company’s coming” fast) variation: 

Toss a brick of cream cheese on a plate and surround with crackers. Flake imitation crab meat and toss on top. Buy a jar of Allied Homemade Chili Sauce and pour that on top. Ready!

Mango Dip

1/4 c heavy whipping cream

1/4 c sour cream 

2 c sliced mangos 

Brie

Glaze: 

Brandy, butter, brown sugar

Ingredients

Mix creams and mangos in a food processor and refrigerate

Simmer glaze ingredients.

Place brie in oven-safe dish, top with mango mix and glaze, bake until brie is softened.

Ingredients

2 small cans or cups of cocktail shrimp

1 c mayo

2 packages of cream cheese, softened

2 tsp spicy brown mustard

1/2 small onion diced

3 dashes of hot sauce (we like Louisiana)

Crackers or rye bread


Instructions

Combine all ingredients  and serve with crackers or rye bread

1 tbsp chopped pimento

1 tsp minced onion

1 tbsp onion juice

1/4 c ketchup

1/2 c mayo

Ingredients

1.5 c mayo

1.5 c chopped crab meat (real or imitation)

2 c shredded cheddar cheese

2 c chopped onions

Fresh paprika


Instructions

Mix together, bake 30 mins on 350. Serve with crackers. 

 


Scallop Cheese Soup

Ingredients

2 slices of bacon, chopped and sauteed 1/2 done.

1 small onion, diced

1 tbsp butter

Herb mixture: Parsley, thyme, bay, etc.

1 clove of garlic

1 c water mixed with 1 bouillon cube

3 small red potatoes cubed

68 thawed scallops

1 c Cream or milk

1/2 C white wine

2 tbls real mayo

1 small tub blue cheese

1/2 c of mozzarella, or gruyere cheese, shredded and tossed with flour.


Instructions

Slightly saute herbs, bacon, potatoes and onion. Add scallops for only 1 minute. Add wine, then add all other ingredients and simmer. 


Mint Juleps

Irish, St. Paddy’s Day drink


Scale

Ingredients

1/2 C packed/muddled mint leaves

1 water

2 c sugar

Bourbon

Fresh mint sprigs


Instructions

Boil sugar and water 5 minutes and let cool. 

Muddle leaves with a pestle. Add to syrup. Refrigerate overnight. Strain muddled leaves. 

Fill glass with shaved ice. Add bourbon (100 proof). Add 1 teaspoon of the syrup or more to taste. Stir wit a sprig of fresh mint. 2 parts bourbon to 1 part syrup is the recommendation. 

 

 


Mom’s Pie Crust

Description

Basic pie crust that won’t fail you. 


Scale

Ingredients

12 tbsp cold butter

2 c flour

pinch of salt 

1 tsp sugar

Ice water


Instructions

Mix together until the butter is in small pieces. Use 2 knives to mix/cut the mixture. 

Add 4 to 6 tbsp ice water to the flour mixture, and add 1 more – just enough to barely form a ball. 

Refrigerate dough, covered, for 30 min. Must be at least 25. 

Roll out on a floured board with a towel. Flip over once, then roll to a pie sized dish. Prick the crust and bake 350 for 10-15 min.
