Pecan Pie

Description

This is the recipe Ivy used to make my birthday pie. Pecan pie is my favorite. 


Scale

Ingredients

1 and 3/4 white sugar

1/4 c dark corn syrup

1/4 c butter

1 tbsp cold water

2 tsp cornstarch

3 eggs

1/4 tsp salt

1 tsp vanilla extract

1 & 1/4 pecans

9” pie shell


Instructions

Preheat oven to 350. 

In medium saucepan, combine sugar, corn syrup, butter, water, and cornstarch. Bring to full boil and remove from heat. 

In a large bowl froth eggs, gradually mix in the syrup. Stir in vanilla, pecans, and salt. 

Pour into pie shell and bake 45-50 minutes until it sets.

Mom’s Pie Crust

Mom’s Pie Crust

Basic pie crust that won’t fail you.

Ingredients

12 tbsp cold butter

2 c flour

pinch of salt 

1 tsp sugar

Ice water


Instructions

Mix together until the butter is in small pieces. Use 2 knives to mix/cut the mixture. 

Add 4 to 6 tbsp ice water to the flour mixture, and add 1 more – just enough to barely form a ball. 

Refrigerate dough, covered, for 30 min. Must be at least 25. 

Roll out on a floured board with a towel. Flip over once, then roll to a pie sized dish. Prick the crust and bake 350 for 10-15 min.

2 Variations on beer bread.

Ingredients

Version #1:

3 C self-rising flour (look at the grocery for this it is not regular flour, try Gold Medal)

3 T Sugar

1 Bottle of beer

Version #2:

1/2 C Butter

3 C Self-rising flour

2 T Sugar

1 can Beer (12 oz)


Instructions

Version #1: Knead on floured board for 10 minutes and let rise 2 hours and then bake until done. 

Version #2: Melt butter and pour into a loaf pan to coat bottom. In a large bowl, mix flour, sugar and beer. Spoon into pan. Pour remaining butter over top. Bake at 325 for 1.5 hours.
