Ingredients

Thaw and squeeze 2 packages – 6 oz of Alaskan King Crab and set aside

12 oz cream cheese

2 tbsp Worcestershire sauce

1 tbsp lemon juice

2 tbsp butter

1/2 c finely chopped onion

4 dashes garlic salt


Instructions

Whip together and spread on a decorative dish. Spread 1 bottle of cocktail sauce on top of the cream cheese mix. Place chunks of crabmeat on top of cocktail sauce. Serve with wheat thins to scoop. 


Notes

Meara’s super-fast (like “Oh shit, company’s coming” fast) variation: 

Toss a brick of cream cheese on a plate and surround with crackers. Flake imitation crab meat and toss on top. Buy a jar of Allied Homemade Chili Sauce and pour that on top. Ready!

2 small cans or cups of cocktail shrimp

1 c mayo

2 packages of cream cheese, softened

2 tsp spicy brown mustard

1/2 small onion diced

3 dashes of hot sauce (we like Louisiana)

Crackers or rye bread


Instructions

Combine all ingredients  and serve with crackers or rye bread

Description

Yummy fresh cold appetizer to bring to potlucks, superbowl, etc.

Ingredients

Crescent roll pack

12 oz cream cheese

ALOT of fresh dill

2 tsp garlic salt

1/2 c mayo

Finely diced/chopped veggies: Broccoli, carrots, peppers, olives, green onion, etc.


Instructions

Prep a cookie sheet with foil or parchment paper and roll out the crescent dough to form a flat sheet. Spread it thin. Bake lightly – do not brown, for about 5-10 minutes. 

Mix the cream cheese, salt, mayo and dill. 

Spread over the lightly toasted bread and smash the veggies on top (the tinier you chop the veggies the better). Refrigerate 1/2 hour before serving. 


Notes

Juju brought this to the house one day and we went crazy for it! So she shared her idea. She forgot where she got it from. Especially good with the broccoli.

Shrimp Eggrolls

A cream cheese shrimp eggroll. Story is in the notes so you can skip to the recipe first!


Scale

Ingredients

  • 56 uncooked, peeled shrimp and diced very fine (lobster tail works too)
  • 1/4 of an onion, minced very fine
  • Handful of carrots
  • 1 tsp garlic or a pinch of garlic powder
  • 2 tbls fresh chopped chives *must be fresh!
  • 5 tbls cream cheese – not too soft; or one 8 oz package
  • Squeeze tube ginger – a pinch
  • Prickly pear juice – dash; or honey as a substitute
  • Egg roll/wonton wrappers
  • Cornstarch *if mix is runny from the shrimp
  • Water dish with 1 egg white

Instructions

Mix all ingredients and wrap like an eggroll, using water egg white mixture to seal. Lightly fry in peanut or canola oil for 1-2 minutes, drain OR airfry 12 minutes on 400. Serve alone or with orange ginger sauce or sweet and sour jelly.


Notes

I had shrimp eggrolls a few times at Steamers Restaurant in the Biltmore. I would go there, alone, just to pay $15 for one order of them. Then the place closed and I was doomed. This took me years to come close to the taste I remember!
